Spelt Tortilla
You will need:
— 460g spelt flour
— 1 tsp tamari
— 1/2 tsp baking powder
— 1 tblsp oil
— 180ml warm water
Instructions:
• In a bowl, mix all ingredients well.
• Cover and let sit in a warm place for 20 minutes.
• Divide into 8 equal parts and let sit, covered, another 20 minutes.
• Preheat a frying pan on medium high heat.
• Roll each ball out to a 6 or 7 inch circle shape.
• It helps to flatten each ball with your hand.
• Then take the rolling pin and roll from the centre outwards, back and forth a few times as you go around the circle.
• Place a tortilla into the hot pan and watch until bubbles form.
• This won’t take long.
• After bubbles form and the bottom is lightly browned or has dark spots, flip over, press down once or twice, and cook for about 30-45 seconds.
• Cook remaining tortillas, placing a layer of paper towels between each tortilla till your ready to serve.
