Thai Fish Fingers
You will need:
— 1 small red onion
— 1 garlic clove, crushed
— 2.5cm piece of ginger minced
— 1 red chilli minced
— 200g tinned red salmon
— 200g tined pink salmon
— 2tbsp coriander leaves
— 1tsp of fish sauce
— 1 egg
— 75g spelt bread crumbs
— 25g desiccated coconut
— Ground black pepper
— 1dstsp olive oil
— 1tbsp for frying
Instructions:
• Put a ring on a medium heat.
• Put the oil in the pan and let it heat.
• Sauté the onion, ginger, garlic and chilli.
• Put the fish in a bowl add the coriander, fish sauce, onion mixture beat the egg yolk and add it and 2/3 of the bread crumbs.
• Mix well and add the pepper.
• Divide the mixture into 8 equal parts and form little blocks like fish fingers or patties if you prefer.
• Whisk the egg white and dip the fish fingers in it.
• Mix the remaining bread crumbs and desiccated coconut and dip the egged fish finger in this mixture.
• Then fry the fish fingers in some hot oil.
