Tomato and Avocado Salsa
You will need:
— 10 cherry tomatoes
— 1 ripe avocado
— 1 small red onion diced
— 1 large clove garlic crushed
— 1 tblsp olive oil
— 1 lime, juiced
— 1 handful of coriander chopped
Instructions:
• Cut the tomatoes into eights and put them in a bowl.
• Cut the avocado in half and remove the stone.
• Hold half the avocado in one hand, using a knife cut the avocado flesh lengthways cutting all the way through to the skin of the avocado leaving a gap of about a _ inch between each cut.
• Score the flesh of the avocado widthways in the same way forming a grid pattern in the avocado flesh.
• Use a spoon to scoop the flesh out of the avocado skin into the bowl.
• Repeat with the second half of the avocado.
• Add the diced onion and the garlic and give everything a good mix around.
• Add the coriander lime juice and olive oil and mix well.
• This is again better if you have time to leave the flavours infuse before eating.
