Vegetable Soup
High nutrient and low calorie: a winning combo when you want to wave good bye to a couple pounds. This delicious soup helps you achieve your weight loss goals as its high fibre and protein to help keep you full for hours.
You will need:
1 large white onion, diced
4-5 cloves garlic, minced
1 cup celery, diced
1 cup carrots, diced
¾ cup green peppers, chopped
¾ cup red peppers, chopped
4 medium tomatoes crushed (or 1 16 oz. can crushed tomatoes)
1 ½ cups broccoli florets
1 ½ cups cauliflower florets
1 cup zucchini, chopped
1 14 oz. can red kidney beans
1 tsp paprika
½ tsp dried oregano
Salt and black pepper to taste
Instructions:
Fill a large pot with 6 cups water, add tomatoes, onion, celery, carrots, green pepper, red pepper and garlic and bring to boil. Continue to boil until veggies are soft, about 8 minutes. Then add broccoli, cauliflower, zucchini, kidney beans, paprika, oregano and a few grinds of fresh black pepper and continue to boil for another 5-10 minutes. Reduce to simmer and add a pinch of salt to taste. Ladle soup into bowls and serve with a few slices of sprouted grain bread on the side. This is another great soup to eat throughout the week or freeze for future meals!
